Methodology
STEP 1
Bloody Mary with horseradish pictures: Combine 700ml tomato sauce with 50ml of vodka, the juice from one lemon and Tabasco in a large jug. Also add a good amount of vegetarian Worcestershire and Tabasco. Then chill. Pour into 10 shot glasses and add a thin cucumber stick as a stirrer. Top with a small amount of creamed Horseradish.
STEP 2
Quails’ egg dukka with cumin, coriander and hazelnuts: Toast 1 tbsp each of cumin and.. Mix with 50g of sesame seeds, salt and pepper to taste. Serve in small bowls alongside 24 quails’ hard-boiled eggs, cut in half.
STEP 3
Mini avocado tarts. Purchase mini croustade cases from the supermarket, and then add a small amount of bitter cream to each case. Blend finely chopped avocados with a few poppy seeds, a bit of lime juice and some finely chopped chives. Then pile the mixture on top of bitter cream.
STEP 4
Parsnip chips with maple mustard dip: Peel one parsnip for every person. Cut into chunky chips, and roast in sunflower oil with seasonings at 220C/200C Fan/gasoline 7, for 20-30 mins until crispy and golden. Mix a 200ml tub of creme fraiche, 2 tbsp mustard and 2 tbsp syrup with a little seasoning. Serve the parsnip chips for dipping.
STEP 5
Halloumi Dippers with Chilli Pineapple Salsa: Finely chop 200g of contemporary or canned pineapple, add 1 finely diced purple onion and 1 finely minced purple chilli, and style with the juice from 1-2 limes. Use 250g of halloumi for 5-6 people. Slice into chunky pieces, thread onto small wood skewers, and grill until crispy. Serve with salsa.
STEP 6
Greek kebabs w/ houmous and tzatziki – Cook dinner or purchase funky falafel. Skewer each one with a little cucumber, a small dice of feta, and a cherry tomatoes. Houmous and Tzatziki pots can be placed on the side.
STEP 7
Poppadoms crunch with mango chutney. To feed a large crowd, shred finely 3 carrots peeled, cube half a cucumber, and finely slice four spring onions. Add a squeeze lemon juice, 1 tbsp of toasted mustard seeds and combine. To serve, pile the mango chutney into mini poppadoms and top with coriander.
STEP 8
Fig and blue cheese skewers. Skewer cubes of cheese and fig wedges onto cocktail sticks or skewers. Drizzle with honey, and sprinkle with thyme to serve.
STEP 9
To make Christmas pudding truffles, melt together 200g dark chocolate and 200ml cream. Then crumble in leftover cooked Christmas pudding (purchase the vegetarian version), then chill. Use a melon-baller or roll the balls into balls. Dip them in melted white chocolate and sprinkle with edible decorations. Then chill.
STEP 10
Mini cranberry and orange scones. Prepare a batch of scone mix (from a package or find the recipe on bbcgoodfood.com), adding some dried cranberries, and orange zest before stamping out and baking. Once cooled, spread generously with orange curd or jaffa (we used Waitrose), and top with a dollop or thick double-cream.
