Components
Two massive slices, finely sliced
Finely sliced
One sliced
1 Finely Sliced (elective).
Marinade
Crushed 1 heaped tablespoon
4 tbsp of juice
Tabasco 4-5 drops
To serve

Technique
STEP 1
Wrap 6 medium tortillas with foil and heat oven to 200C/180C Fan/gasoline 6.
STEP 2
Mix together 1 heaped tablespoon smoked paprika with 1 tbsp ground coriander and 2 crushed garlics cloves in 4 tbsp of olive oil. Add the juice of one lime, Tabasco, and 4 tbsp of olive oil.
STEP 3
Add 2 finely chopped rooster, 1 finely cut crimson onion and 1 sliced red pepper to the marinade, if using.
STEP 4
Add the marinade and rooster to a hot griddle pan.
STEP 5
Use tongs to keep the items moving over high heat for 5 minutes, until you achieve a nice charred effect. If your griddle is small, you may want to do this in two batches.
STEP 6
If you want to test if the rooster has been cooked, tear the thickest part in half. If any of the half is still uncooked, continue cooking until it’s done.
STEP 7
Serve the tortillas with the rooster cooked, one bag of mixed salad and a 230g tub contemporary salsa.
